A nakiri is a traditional Japanese vegetable knife designed for precision and ease in vegetable preparation. Characterised by its rectangular blade and straight edge, it excels at chopping, slicing, and dicing vegetables with clean, uniform cuts. The flat blade ensures full contact with the cutting board, making it ideal for creating thin slices and intricate cuts without leaving uncut sections. It can also be added to an existing collection as a daily workhorse for vegetables, thanks to the durability of the materials. 420J2 stainless steel is very rust resistant and durable and sharpens easily. While it is stainless, we recommend that cooking knives are washed and dried by hand.
